Root Cellar Cafe at 1090 S Business IH 35 is the New Braunfels sister of a San Marcos original that ran for two decades before expanding here in 2023, and it cooks from scratch with locally sourced ingredients in the building that used to be the New Braunfels Smokehouse. The Smokehouse Hash still uses New Braunfels Smokehouse sausage, which is the right way to treat a building's history.
The eggs Benedict with bacon substituted in is my standing order. I keep meaning to try something else and keep not doing it.
Doors open at 7 am every day. Weekend brunch takes no reservations, so the early table goes to whoever wanted it more.

Buttermilk Cafe
Buttermilk Cafe at 1324 E Common St runs Monday through Saturday, 7 am to 2 pm, closed Sundays, and the kitchen belongs to Chef Carol Irwin, who has been named both San Antonio Chef of the Year and Texas Chef of the Year. The menu is comfort food with the volume turned up: eggs Benedict, chicken and waffles, biscuits under sausage gravy.
The Creole breakfast puts shrimp and roasted jalapeno grits on a breakfast table, which is not something every cafe in town would attempt.
Portions run big. Plan on $8 to $14 a plate and skip the mid morning snack.
A chef with two titles cooking your Tuesday eggs is quietly one of the better deals in town.

breakfast. is the newest name on this list, opened in August 2024 by New Braunfels locals Joe and Sarah Silvernail at 2168 Oak Run Pkwy in Veramendi, and yes, the period is part of the name. It's a tipless, order at the table spot with an open kitchen, closed Mondays, running 7 am to 2 pm the rest of the week.
The menu swings for it: breakfast egg rolls, chicken waffle nachos, cinnamon roll pancakes, and a rotating pancake of the month.
This is the tier where breakfast becomes an event. Plates run $14 to $18, and the burger with sausage, bacon, jam, and a hash brown on it sits at the top of that range.
Some mornings call for two eggs and quiet. This place is for the other mornings.

Krause's Cafe
Krause's Cafe at 148 S Castell Ave serves breakfast daily from 7:30 am, weekdays until 11 and weekends until noon, in a German cafe and biergarten that anchors downtown New Braunfels. The signature breakfast stacks bacon, sausage, ham, peppers, potatoes, cheese, and two eggs under sausage gravy with a biscuit.
There's also schnitzel topped with two eggs and hollandaise, which is about as New Braunfels as a sentence gets.
Come on a weekday if you want a table without a wait. Come on a weekend if you want the full downtown morning, noise included.
Order the signature scramble, pay $13 and up, and walk it off along the Comal.
